Choose by mount type and depth; check the shelf's rated load:

Health codes require food and supplies to be stored at least 6″ off the floor on cleanable, non-absorbent shelving; wire and stainless both qualify. Keep shelving out of the splash zone of hand and prep sinks, and don't store anything under an unshielded overhead sewer line.

Wire shelving is lighter, cheaper, and airflows well (good in walk-ins); solid stainless is easier to wipe down and better over prep areas where crumbs would fall through. Both are NSF-cleanable.
It depends on gauge, bracket spacing, and how it's anchored into studs/backing — heavy items belong on unit shelving, not a single wall shelf. Check each shelf's rated capacity.
