Walls behind sinks and prep areas must be smooth, non-absorbent, and cleanable — a stainless splash guard turns a painted or FRP wall into a wipeable, code-friendly surface and protects it from constant wetting.

Where an open wall sits beside a sink or dish station, a stainless guard keeps the wall smooth and cleanable (a code requirement) and prevents water damage — cheaper than repeatedly repainting or replacing wall board.
A table's integral backsplash protects at the table edge; a wall-mount splash guard/panel protects the wall itself in the splash zone. Many stations use both.
