Size by ice capacity and whether you need a cold plate / bottle storage:

Ice for drinks is a food: the bin must be NSF-listed, drained to an air gap (never a direct plumbing connection), and kept clean. A dedicated ice scoop stored outside the bin is a standard inspection point.

A cold plate sits under the ice and chills soda-gun lines running through it — so drinks pour cold without a separate chiller. Match the cold plate's circuit count to your soda system.
To an air gap, not a direct drain connection — that prevents backflow into the ice. This is a common inspection requirement.
