The big induction wins are a cooler kitchen, lower energy use, and — for genuinely non-grease cooking — the chance to avoid a Type I hood, which can transform a build's cost. But greasy cooking still produces grease vapor that an AHJ may require a hood over regardless of the heat source, and induction needs the right cookware and heavy wiring. Is induction cheaper to run than gas?
Per unit of heat into the food, yes — induction delivers roughly 85–90% of its energy to the pan versus about 35–40% for gas, and it adds far less ambient heat, which lowers cooling costs too. Whether it's cheaper overall depends on your local electricity vs. gas prices and the higher upfront equipment cost.
Do induction cooktops need a hood?
Not for the combustion or radiant heat — induction produces neither. If you're cooking food that produces grease-laden vapor or smoke, an authority may still require a Type I hood over it regardless of the heat source. Purely non-grease cooking on induction can sometimes run without a hood, but always confirm in writing with your local authority before you rely on it.
What's the catch with commercial induction?
Three things: it costs more upfront, it requires induction-ready (magnetic) cookware, and it needs heavy 208/240V electrical circuits that your building has to supply. For many operators the cooler kitchen, efficiency, and potential to skip a hood outweigh these — but not always.
Is induction better than gas for a commercial kitchen?
It depends on your menu and building. Induction wins on efficiency, a cooler kitchen, precise control, and sometimes avoiding a hood; gas wins on lower upfront cost, universal cookware, and familiarity. Grease-heavy, high-volume lines often stay gas; energy-conscious, space- or ventilation-constrained, or non-grease concepts increasingly go induction.
