Rice is a low-cost, high-margin staple, and the machine that makes it is simple — but three different products get called "rice cookers." A rice cooker cooks raw rice. A rice warmer only holds already-cooked rice at serving temperature. A cook-and-warm model does both, switching to hold automatically when the batch is done. Decide which you need first, then size it. The other choices are capacity, fuel, and hold time.

For most single-unit kitchens, a cook-and-warm model is the practical buy. High-volume operations often run dedicated cookers feeding one or more separate warmers so cooking never stops holding.
Capacity is rated in cups, and here is the catch buyers miss: a rating usually means uncooked cups, and rice roughly doubles when cooked. A "30-cup" cooker makes about 60 cups cooked. Commercial units start around 25–30 cups and run up past 100 cups per batch for high volume. Size to your peak-service batch and factor cook time — a batch takes roughly 30–60 minutes, so a single large cooker may not keep up with continuous rush unless you stagger batches or add a warmer. Resist the urge to oversize: rice is best fresh, and a pot run half-full cooks unevenly, so it is usually better to run two right-sized batches than one huge one that sits and dries out.
Most commercial rice cookers are electric — cheaper, portable, easy to install, and available up to large capacities; they suit the majority of kitchens and often just need a standard outlet. Gas cookers heat faster and are preferred for very high output or where electrical capacity is limited, at the cost of a gas connection and (often) ventilation. Hold time is a food-safety issue. Many warmers hold rice at quality for up to 12 hours, but "holds warm" only counts if it stays at or above 135°F (57°C) — the hot-holding line in most food codes. Rice is a classic vehicle for Bacillus cereus when held in the danger zone. Verify hold temperature with a probe, not the light, and check your local requirements.
A busy restaurant with steady all-day rice sales is best served by a cook-and-warm electric unit sized to peak batch, plus a separate warmer if you plate continuously. A sushi bar or buffet that receives rice from a back-of-house cooker needs warmers, not cookers. Look for a nonstick, removable pot for easy cleaning, a clear water-level scale, and a sturdy hinged lid. Match it with clean holding on your pan racks and, for steamed sides, consider a commercial steamer.
