A soft-serve machine is a big, cost-of-ownership decision, so start with two questions: how many servings at your peak, and how many flavors (single, dual, or twist)? Those answers drive every choice below — gravity vs pump, air vs water cooling, and whether you need heat-treatment. Countertop models suit low volume and limited space; floor models handle high output.
This is the core mechanical choice. A gravity machine drops mix from a hopper on top into the freezing cylinder by gravity — simple, cheaper, and easier to clean and maintain. A pump (pressurized) machine uses an air pump to push mix in, which injects far more air, or overrun. More overrun means a lighter, fluffier, creamier product and more servings per gallon of mix.

Overrun is simply how much air is whipped into the mix. Higher overrun stretches your mix further and gives that classic fluffy soft-serve texture, at the cost of a more complex machine.
The compressor has to dump heat somewhere. Air-cooled machines vent heat with a fan and are the default recommendation: cheaper to install, less maintenance, no water hookup. They need clearance around the unit and a reasonably cool room to work well. Water-cooled machines shed heat into water; they run quieter and cooler in hot or tight spaces, but many jurisdictions prohibit single-pass city water, so you often need a glycol/chiller loop — a real added cost. Choose air-cooled unless heat or space forces water.
Tip: Give an air-cooled machine room to breathe. Crammed against a wall in a hot back room, the compressor works harder, the product suffers, and the machine wears out faster. Check the manufacturer's clearance spec before you plan the counter.
Heat-treatment (heat-treat) machines run a nightly pasteurizing heat-and-cool cycle that safely holds dairy mix in the machine for up to about two weeks before you need to tear it down and clean it. Standard machines must be disassembled and sanitized far more often — often daily. Heat-treat units cost more upfront but slash labor, waste, and food-safety risk for high-volume operations. Low-volume shops usually do fine with a standard machine and a nightly clean.
