Pick the oven type by your menu and volume first — that decision matters far more than brand.

Start with a convection oven unless your menu points elsewhere: a combi if you want steam and maximum flexibility (and can supply water/drain/power), a deck for pizza/bread, or a conveyor for high-volume consistency. Then choose gas vs electric by your utilities.
