Stainless work tables look identical online, but four choices separate a table that lasts twenty years from one that flexes and stains within one: steel gauge (thickness), stainless grade (304 vs 430), construction (welded vs knock-down), and base and undershelf. Gauge is counterintuitive — a lower number means thicker, stronger steel. The common range for work-table tops is 14, 16, and 18 gauge. Fourteen gauge is the thickest and best for heavy pounding, mixers, and slicers; 16 gauge is the practical standard for most prep; 18 gauge is lighter and fine for low-stress stations but flexes under heavy loads. Pay attention to the top gauge specifically, since some budget tables advertise a heavy frame but use a thin top.

The grade determines corrosion resistance. 304 (also called 18/8) contains more nickel and chromium, so it resists rust, pitting, and acids well — the right choice for wet areas, near dish machines, and anywhere it meets salt, citrus, or cleaning chemicals. 430 has less nickel, is magnetic, costs less, and resists corrosion adequately in dry, low-moisture areas but can spot and rust with heavy moisture or harsh chemicals. Tip: A quick field test: a magnet sticks firmly to 430 and only weakly (if at all) to 304. It is not perfect, but it helps spot a table sold as 304 that is actually 430.
Welded tables arrive fully assembled with the legs and gussets welded to the top. They are more rigid, have fewer crevices to trap food, and are the durable choice for permanent stations — but they cost more and ship bulky. Knock-down tables bolt together on site, ship flat and cheaper, and are easy to move through tight doorways; the trade-off is slightly less rigidity and more seams to clean. For a table that stays put and takes abuse, welded wins; for tight budgets or frequent reconfiguration, knock-down is fine.
For the base, decide between galvanized legs (cheaper, fine for dry areas) and stainless legs (better in wet or corrosive zones), whether you need an undershelf for storage, and whether the table needs casters to roll or adjustable feet to stay level. A backsplash is worth it against a wall to stop splash running behind the table. If the table will roll, insist on locking casters so it stays put during heavy prep.
