One more axis to decide is mobile vs stationary: units on casters roll out for cleaning and reconfigure easily, while stationary posts with leveling feet are more stable for the heaviest loads. Capacity depends on the finish, the shelf dimensions, and how evenly the load is spread. As a general guide, chrome and epoxy wire shelves commonly carry on the order of 600–800 lb per shelf, while stainless and polymer shelves can reach up to around 1,000 lb per shelf — always confirm the manufacturer's rating for the exact size. Two rules matter more than the headline number: the rating assumes an evenly distributed load, and total post capacity caps how much the whole unit can hold. Don't stack all the weight on one shelf or exceed the post limit. Adding more shelves lowers the load each one can safely carry, and longer shelves sag sooner than short ones, so plan tier spacing and shelf length around your heaviest cases.
Tip: Store food at least six inches off the floor. Add a bottom shelf or dolly base so the lowest level clears the floor, which most codes require and which makes cleaning underneath possible.
