A BTU (British thermal unit) is a unit of heat — roughly the energy needed to raise one pound of water by one degree Fahrenheit. On gas equipment, the BTU-per-hour rating tells you how much heat a burner can deliver when it is running full out. A higher rating means faster heat-up and stronger recovery when you drop cold food onto the surface. It does not mean "better" for every job — it means more heat, more fuel, and more exhaust to manage.
Ratings vary a lot by brand and model, so treat these as common ranges rather than exact specs. Open burners on a commercial range typically run about 25,000–35,000 BTU each; specialty stock-pot burners go much higher. Fryers and griddles are rated by their whole cooking area rather than per burner.

These figures are illustrative ranges drawn from common commercial models; always confirm the nameplate rating on the unit you are actually buying. Note that BTU describes gas heat output only — electric equipment is rated in watts or kilowatts, so you cannot compare a gas fryer and an electric fryer on BTU alone. To compare fuels fairly, look at cooking-energy efficiency and your local gas-versus-electric rates, not just the raw heat number.
Individual ratings are only half the story. Add them up and you get your kitchen's connected gas load, which drives three things: the gas pipe and meter sizing that has to feed everything at once, the ventilation hood and exhaust rate over high-heat equipment, and your ongoing fuel cost. Gas-line sizing depends on the total BTU demand, the pipe length and material, the number of fittings, and the delivery pressure — it is genuinely a job for a licensed plumber or gas fitter who will size to code. What you can do as an operator is provide the connected load and let them do the calculation. On the appliance side, resist the urge to just "buy the biggest." Match BTU to your menu and volume: a high-output wok range earns its fuel bill in a stir-fry house, but the same burners waste gas under a low-volume breakfast line.
Reality check: more BTU is not free. It raises fuel cost, hood size, and sometimes the electrical or gas-service upgrade you need. Size to the work, not to the spec sheet.
